Notes: We've made this one a few times, it's become a staple in our house. It is SO good. Literally, I'm trying to write something, but all I can think is "mmmmm," while I salivate. It's that good.

Notes: So - I have a two year old. Have I mentioned that? And I'm tired. So, I forgot the butter in the Tomato Butter Sauce. I FORGOT THE BUTTER! Butter is delicious, but it seriously hardly mattered. The sauce came out excellent and the chicken was tender and juicy. Some other changes: I used about 2 TBSP of olive oil instead of a 1/4 cup. Not necessary. I also only pan seared and then let the chicken finish cooking in the sauce, much longer than is recommended in the recipe.

Notes: I seriously love a sheet pan dinner. They are quick, easy, and involve very little mess. Plus, sheet pan dinners are an easy way to involve Timmy in meal prep. He loves to help and so I let him place and sort various veggies on the sheet pan.
This was so, so, so, so good. And incredibly easy. As you can see below - it's incredibly high in points and I knew that ahead of time. Once I got into the recipe, I realized that all of that butter (4 TBSP!) was probably an unnecessary addition. To be fair, I've not yet tasted the recipe with butter, but trust me. It's freaking delicious without it. Roasted vegetables take on their own delicious flavor - you don't need more than a spritz or two of oil and some spices.
