What We Ate This Week

Monday

Melanie Makes

Recipe: Slow Cooker Chipotle Pumpkin Corn Chowder
Rating: Only Okay
Notes: I could not find a couple ingredients and I wonder if those two items really impacted the flavor of this chowder. First was frozen fire-roasted corn, which we replaced with plain old frozen corn. Matt's major complaint was that he wanted some sweetness to the chowder, which isn't at all apparent. I can't know if the fire-roasted corn would bring the sweetness, but if we do make this again, I would try frozen sweet corn instead.

The second was chipotles in adobe. Seriously, does chipotles in adobe truly exist? Because I've never found it. Sub Chipotle Tabasco if you can't find this magical substance either.

The only person who devoured this was Timmy. He was really, really into it.

Tuesday

Karen's Kitchen Stories

Recipe: Chicken with Apple, Onion, and Cider Sauce
Rating: Good
Notes: Wow. What a mediocre week so far. This was... medium. It was certainly tasty and the chicken turned out juicy, but there was something about it that makes me think: glad I ate it once, probably never again. Matt, on the other hand, loved it. Honestly, it's not like I would recommend not making it. It's just, with all of the recipes that exist to make in this world, I don't mind passing this one by.
