Recipe: Baked Chicken Parmesan - The Cookie Rookie
Rating: Good!
Notes: We forgot marinara and I accidentally used the petite diced tomatoes that were set aside for Tuesday's meal instead - but this was still good! Full disclaimer: Timmy was screaming his head off and so I never got to make the riced cauliflower, but the broccoli and chicken were filling enough on their own.

Cookin' Canuck

Recipe: Slow Cooker Vegetable Barley Soup - Cookin' Canuck
Rating: Very Good!
Notes: I was a little surprised by how thick this soup came out and I have to wonder if we overcooked the barley. Though it was delicious right out of the crockpot, its thickness did not make for delicious leftovers.


Wednesday


Recipe: Pork Loin with Brown Sugar Rub
Rating: Very Good!
Notes: This is my own concoction, working with what I had in the kitchen. It came out really, really good. Next time around, I'd probably let it sit in the rub overnight, rather than slapping it on right before throwing it in the oven.

Rub Ingredients: 
1/2 cup brown sugar
1 tsp cumin
1/2 tbsp smoked paprika
1 tbsp garlic
1/2 tbsp thyme
salt & pepper
2 tbsp honey
