Saturday Ambitious Kitchen Recipe:   Thai Peanut Coconut Cauliflower Curry Rating: Great! Notes: We've made this one a few times, it's become a staple in our house. It is SO good. Literally, I'm trying to write something, but all I can think is "mmmmm," while I salivate. It's that good. WW: 5 Freestyle Points Tuesday Pinch of Yum Recipe:  Garlic Basil Chicken with Tomato Butter Sauce Rating: Very   Good!  Notes: So - I have a two year old. Have I mentioned that? And I'm tired. So, I forgot the butter in the Tomato Butter Sauce. I FORGOT THE BUTTER! Butter is delicious, but it seriously hardly mattered. The sauce came out excellent and the chicken was tender and juicy. Some other changes: I used about 2 TBSP of olive oil instead of a 1/4 cup. Not necessary.
